agreement we have concluded with our fishers gives us an
excellent control over the quality of the raw material. Thus,
the shrimp is processed rapidly and efficiently without being
exposed to contaminants. The fresh crustacean shells undergo a
chemical and physical extraction process. The first step towards
the obtaining of chitosan is a deproteination and a mineral
removal. This process will be followed by the deacetylation of
the chitin (insoluble) to finally obtain the chitosan (soluble).
